Using only the freshest ingredients, Sicilian Chef Claudio brings us the flavors of Italy with a hearty treatment of meat and game. For a starter, the Marinated duck in anise, with strawberry dressing and celery salad or Senese Ham with bread piedina, vegetables “giardiniera” and taleggio sauce is delicious as it is. For the pasta dish, Paccheri pasta with rabbit ragout, green peas and pecorino cheese or Pheasant home made ravioli served with celeriac and butter sauce is a sure compliment to the main course of Grilled spring chicken with herbs risotto and rosemary sauce or Roasted venison fillet with polenta, small white onion and chocolate sauce.
