Our award-winning Chef Leung gives an oriental tang to crabs flown in fresh from the world over. And his menu focuses on crab roe!

“If you are a fan of this tender orange delicacy, keep to the female of the species, which has a distinctive red-orange color and an even creamier texture,” says Chef Leung. He likes to balance the strong shellfish flavors with mild ingredients to make the most of the fresh flavors.

Crispy Crab Roe with Winter Melon, Wok-fried Crabmeat and Crab Roe with Steamed Milk and Egg White, Stir-fried Prawns Crusted with Crab Roe and Egg Yolk, and the delicious Deep-fried Snow Crab Leg Wrapped with Bean curd and Shrimp Mousse.
